I attempted to make a complete Greek dinner for my family. I found this recipe at a site, but when we tried it, it was rather bland. I followed the recipe exactly, but was very disappointed. What can I add to it to make it more flavorful, but still keep it in line with a Mediterranean dish?
Here are the ingredients: 1 (2- to 3-pound) chicken, cut up
3 tablespoons olive oil
5 cloves garlic, chopped
3 yellow onions, chopped
3 cups tomatoes (fresh or canned), chopped
1 (6 ounce) jar green stuffed olives or 3/4 cup salad olives
Black pepper, to taste
1 tablespoon dried oregano (or 2 tablespoons chopped fresh)
1 cup dry red wine
Salt, to taste
You brown the chicken, then add the rest of the ingredients and simmer for 30 min. I used all fresh spices. Any help spicing it up, or any suggestions of a substitute recipe would be greatly appreciated. Thanks!I need help with a Greek dish?
Add 2 Whole heads of garlic, a Whole White onion to the 3 you have , a teaspoon of Vinegar, Use fresh and dried Oregano and Sea salt(very important) and Fresh Ground Black pepper(again, very important), add 2 small Whole natural tomatoes, washed and with the skin, and a few flakes of red pepper flakes(you won't taste the heat), and add the juice of the Olives to the Chicken pan while baking(uncovered at first to create that crust, then covered)..and save some Olive juice, whole tomato, parsley, onion, garlic, and get some chicken broth for the AMAZING rice you'll make as a side DISH, add a salad and ENJOY:)I need help with a Greek dish?
it sounds like it should really be good basedon the ingredients. I am going to suggest that your season your chicken with the garlic, onions, salt, and pepper in the fridge overnight. (Even better if you add some olive oil to the mix and help make it a true marinade.)
You need time for some flavor to get into the chicken before you seal it by browning it. Also, this sounds like a recipe that would work better with dark meat than white meat.I need help with a Greek dish?

For example, the vegetarian dish " Haniotiko Mpoureki" (oven baked slices of potatoes with zucchini, myzithra cheese and mint) is a typical dish in western Crete, in the region of Chania. A family in Chania may consume this dish 1-2 times per week in the summer season. However, it is not cooked in any other region of Greece. Many food items are wrapped in Filo pastry, either in bite-size triangles or in large sheets: kotopita (chicken), spanakotyropita (spinach and cheese), hortopita (greens), kreatopita (meat pie, using minced meat), etc.
I have trouble believing that was bland. It's got lots of tasty stuff in it. Maybe it should have had more salt and pepper. You could also try simmering everything longer and slower but put the chicken in later so it doesn't simmer so long that it falls apart. If you were expecting a Greek dish to be spicy, you were mistaken, Greek food is good but not really strong tasting. A trick you could try is adding a bit of hot sauce, any kind. Not enough so the dish is hot tasting, but sometimes a bit of hot sauce gives a little extra zing.
