Smash Sandwich Recipe?

When I was in the navy, I spent a lot of time in the Mediterranean. Ports of call like Italy and France. Somewhere along those ports of call there were late night street vendors selling what was called a "Smash Sandwich". I'd love to know what was in them or if anyone has a recipe. Short of going back to Europe, I haven't found anywhere that has a recipe. Can anyone help me?Smash Sandwich Recipe?

Serving: 2



- 1 french bread

- 150 g ( 5 1/4oz ) prepared filet americain (recipe below)

- 1 onion (chopped)

- 1 gherkin (sliced)

- mustard

- ketchup

- tabasco

- pepper and salt

- cayenne pepper



To Prepare

Cut the french bread in 2 pieces and cut them open. Spread the filet americain on the bread. Add some mustard and ketchup and garnish with some onion and gherkin. Season to taste with pepper, salt, cayenne pepper and tabasco.



Filet Americain

Ingredients:

2 lbs. choice or prime ground sirloin

2 tablespoons capers

1 small onion, chopped

2 tablespoons olive oil

Salt to taste

6 anchovy filets, cut in small pieces

Worcestershire sauce(to taste)

Dash Tabasco

Black pepper(a lot)

1 tablespoon red wine vinegar

2 egg yolks

1/4 cup chopped parsley

1/2 teaspoon prepared mustard(Dijon, preferably



Directions:

Mix ingredients carefully to retain fluffiness. Serve on sandwiches as above or shape into a loaf and serve with bread (sort of a version of steak tartare)

The smash sandwich is also called Filet Americaine.



The Filet Americaine is made with raw ground meat.



There are different spices: one sandwich is:



A sandwich filled with filet americaine (raw ground meat), ketchup, mustard, tabasco or worcestershire sauce, onions and gherkins. It can be quite hot.
