Recommended Cooking books? (international?)?

Hi! I'm looking for a bunch of cooking books to buy but I can't seem to figure out which ones. I'm interested in cooking foods from a variety of cultures. Such as italian, french, turkish, japanese, russian, chinese, german, greek, mediterranean. the list could go on. but i'm looking for books that can help me make traditional/authentic food from that country. for example if a recipe is asking for a ingredient that has to sit out, or squeeze or peel etc and the recipe just wants you to buy it pre preprepared i don't want it. I want to also know the techniques and the correct measurements (like i heard somewhere that an onion in america is equivalent to 3-4 onions in india) i don't know if thats right but i hope im wording myself correctly. Here are some books I think would be good, but if you know a better one can you please tell me and where to buy it. Thank you!

Here is a list

1) La Cucina: The Regional cooking of italy by the italian academy of cuisine

2) Mastering the art of french cooking by Julia Child

3)Arabesque: A taste of morrocco, turkey, and lebanon by claudia roden

4) Food of life: ancient persian and modern iranian cooking and ceremonies najmeih batmanglij

5) The complete middle east cook book by Tess Mallos

6) the classical cookbook by andrew dalby

7)Around the roman table: food and feasting in ancient rome

So yeah, those were just a couple, im just really indecisive. if you have any suggestions please say! and if you know any good books of herbs and spices and ancient cooking (rome, greece, persia, china, india) all that jazz. sorry if this is a lotRecommended Cooking books? (international?)?

Eli, I picked up a book at had a glance at it, and it was by the Barefoot Contessa called Back to Basics, very well illustrated. The other two are one by Mario Batali, very Italian recipes and easy to follow. The other is by Jamie Oliver, I wouldn't ignore his books. I have tried a couple of his recipes and were so gooood, and easy steps.

Hello Eli, I love cooking Japanese and Asian cuisine at home.

For Japanese Cooking, I recommend Japanese Cooking at Home by Hideo Dekura. This book has step by step instructions and clear recipes for creating authentic Japanese food at home. It features traditional Japanese dishes including tempura, teriyaki beef, sushi, sashimi, miso soup and daikon salad.

For Asian Cooking, I recommend The Complete Asian Cookbook by Charmaine Solomon. With over 800 recipes from 16 countries, the great thing about this book is that it`s got all the Asian basics in it with things like green chicken curry and satays. Some of the cuisines highlighted in the book include Japan, China, Korea, Vietnam, Thailand, Singapore, India, Pakistan and many more.

Before wasting your money on cookbooks, go to the library or Barnes %26amp; Nobles or some other large book store and go through the cookbooks, to be sure they have recipes you can and want to cook and to be sure the ingredients are available to you. I have over 100 cookbooks. including La Cucina and Mastering the Art of French cooking but still find that I go online to find most of my recipes. It is just easier to print out a recipe then mess up my cookbooks.

EDIT: The Cookbooks I do use most frequently are:
Marcella Hazan's "The Classic Italian Cookbook"
Julia Child's "The Way to Cook"
Jenifer Felicia Abadi's "A Fistful of Lentil" (Syrian Jewish cookbook)
The following two are great all purpose cookbooks:
The Joy of Cooking and
America's Home All Purpose Cookbook, a very old copy
Not to knock Arabesque or Tess Mallos for the matter (she has an interesting Moroccan cookbook). The BEST Moroccan cookbook out there for a foodie like you would be Paula Wolfert's Couscous and Other Good Foods from Morocco...it's been in print continuously for over 30 years. She has a new updated version (some new recipes, color photos and updates to the classics) called The Food of Morocco, it came out recently but I just moved and only ordered it today. This book (I'm referring to the original) is EXTRAORDINARY, VERY authentic. You can NOT go wrong with this book! I've used this book for years and it never disappoints. I also learned a LOT about cooking from it.

Good luck, and happy cooking

Actually, Wolfert has quite a lot of good books, I have a few others and am wishing for those I don't have yet! "Paula Wolfert is widely acknowledged as one of the premier food writers in America and the "queen of Mediterranean cooking." She writes a regular column in Food %26amp; Wine, alternating with Jacques Pepin and Marcella Hazan (she came in as Julia Child's replacement), and she is author of seven cookbooks, several of which have remained in print for upwards of 30 years. Her two most recent cookbooks, The Slow Mediterranean Kitchen and The Cooking of Southwest France, 2nd edition, received glowing reviews..."

Another great book (especially if you garden as well as cook) is "Mediterranean Vegetables: A Cook's ABC of Vegetables and Their Preparation" it's like an encyclopedia of vegetables, explaining about them, how to grow them etc and for each vegetable listed it lists a few recipes to use with it.It is a great reference work.

An out of print book that would really be worth it is Arabian Cuisine by Anne Marie Weiss-Armush. It covers dishes from across the Arab world. Really good book, I found it at a used bookstore several years back.

A really good Greek cookbook is The Olive and the Caper, I must say though that there are a couple of extremely traditional Greek dishes that are left out of this book! I'd tell you which ones but I am currently visiting family and don't have my book with me, it is however a very good book with historical notes as well.

In addition to Mastering the Art of French Cooking Volume 1 I would be sure to get Volume 2 as well!
