Get a box of couscous. It's the traditional starchy side dish, you'll find it in the rice/pasta section and it's VERY easy to make. There are some that all you have to do is pour the couscous into a bowl of hot water!

If there is a sauce/dried fruit/veg/olives etc in the chicken, it's nice just served on top of the couscous too :)
I agree with the coucous, but would even go one step farther and get some tabouli, you can buy a box and just add tomatoes a lot of parsley and lemon juice. its a very healthy and refreshing salad.

you could go basic as well. i like to mix things up and make them authentic, but sometimes it is just easier to do what you know. serve it with potatoes and your favorite veggies or a caesar salad if it's easier. as long as the chicken is a new and exciting recipe it will be enough to spruce up the whole meal.

I know you said you have a chicken recipe but this is my absolute favorite tandoori recipe. I have been told a few times it's the best tandoori chicken people have ever had and I agree, so I thought I would share it.

The couscous suggested by another answerer is a good idea, or you might also want to try orzo, which is pasta that is shaped like rice. You cook it the same as any other pasta, but it doesn't take very long since it's so small. Continue the mediterranean theme by making a salad using the couscous or the orzo, plus chopped olives, tomatoes (fresh or sundried), toasted pine nuts for a little crunch, crumbled feta cheese and some chopped fresh parsley or oregano. You might also consider doing something like a stuffed baked tomato or red pepper using that salad as the stuffing. Or how about a platter of mixed grilled vegetables (red pepper, yellow zucchini/summer squash, asparagus) drizzled with some good extra virgin olive oil, a little red wine vinegar, chopped fresh herbs, salt %26amp; pepper? Bon appetit!
Sorry I'm no culinary expert, in fact I am totally uninterested in the usually pretentious, over rated art of taking food too seriously but couscous??!? I have a healthy appetite and as long as its fresh its on the menu but COUSCOUS?? I mean its like soft gravel with a granular cogitations.

Basmalti rice with fresh herbs stirred through it. cool, let me know how it wentWhat to serve with mediterranean chicken...?
For Fathers Day, have you considered creating a list of why you appreciate him? Answer this survey on that.
