Must cook Mediterranean lunch for a local writer...?

here is what she told me.

How about we cook and talk at my apartment? Send a list of

ingredients you'd like at hand and I'll be sure we have them

(although I reserve the right to moderate the list.)



My favorite menus are Mediterranean and I eat little meat and lots of veggies. I think just plain fresh veggies are scrumptious but thoroughly enjoy more complicated recipes.



WHAT SHOULD I DO? I am a good cook, but I want to really shine here...Must cook Mediterranean lunch for a local writer...?
Mediterranean Pasta



INGREDIENTS



* 1 cup macaroni

* 2 ounces roasted red bell peppers, diced

* 1/4 cup sliced black olives

* 1/4 cup crumbled feta cheese

* 1 tablespoon olive oil

* 1 tablespoon minced garlic

* 1 teaspoon lemon juice

* salt and pepper to taste



DIRECTIONS



1. In a small bowl or cup, combine olive oil and chopped garlic. Set aside.

2. Cook pasta in a large pot of boiling water until done. Drain.

3. Transfer pasta to a medium mixing bowl, and add roasted red peppers, olives, and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.

Mediterranean Spinach Torte -

INGREDIENTS



4 tablespoons olive oil

2 cloves garlic, minced

1 pound fresh spinach, coarsely chopped

2 eggs

3/4 cup cream

salt and freshly-ground pepper to taste

1 cup grated Gruyere cheese

1/4 cup grated Pecorino Romano cheese

1/4 cup grated Parmesan cheese

1/4 teaspoon dried basil

1/4 teaspoon dried oregano



1. Preheat oven to 350F. Heat the olive oil in a skillet over medium heat and saute the garlic until golden and fragrant, just a couple of minutes. Add spinach and saute, stirring often, until wilted and tender. Remove spinach and garlic from the pan with a slotted spoon, leaving as much moisture behind in the pan as possible, and reserve.



2. In a medium mixing bowl, whisk the eggs and cream until thoroughly combined. Butter a 9-inch round pie pan and spread spinach mixture evenly over the bottom. Sprinkle spinach with grated cheese, then pour the egg-cream mixture evenly over that. Sprinkle with basil and oregano.



3. Bake for 35 minutes until golden and puffy. Allow to cool until just warm before cutting and serving.Must cook Mediterranean lunch for a local writer...?
Keep it simple....some great bread, olive oil, zatar, salad, and broiled chicken. Just make sure to use fresh ingred..and wonderful herbs and spices. Have a great time!!
