Need a Mediterranean pasta recipe that takes 1 hour?

Hey, im struggling to find a mediterranean recipe for pasta (because it's yummy and can be eaten in school without people staring at you) that i can cook in my food tech class that takes about an hour in total, prep time and cooking time combined. I would prefer it with no meat included thanks

2 Tbsp. extra-virgin olive oil

4 to 6 cloves garlic, chopped

1 tin flat anchovy fillets, drained

? tsp crushed red pepper flakes

20 oil-cured black olives, pitted and coarsely chopped

3 Tbsp. capers

1 (32-oz) can crushed tomatoes

1 (14.5-oz) can diced tomatoes, drained

A few grinds black pepper

1/4 cup flat leaf parsley, chopped

1 pound spaghetti, cooked to al dente

Crusty bread, for mopping

Grated Parmigiano Reggiano or Romano, for garnish



Heat a large skillet over medium heat and add oil, garlic, anchovies, and crushed pepper. Saute mixture until anchovies melt into oil and completely dissolve and garlic is tender, about 3 minutes: your kitchen never smelled so good! Add olives, capers, tomatoes, black pepper, and parsley. Bring sauce to a bubble, reduce heat, and simmer 8 to 10 minutes.



Toss sauce with cooked pasta. Pass bread and cheese at the table. Serve w/ salad of baby greens, simple dressed.

this will take 45 mins tops....

2 table spoons of veg oil
1 small onion finely diced
1 heaped tablespoon of tomato puree
1 tomato
4 cloves of garlic chopped
salt (to taste)
pepper(to taste)
chilli powder(optional/to taste)
basil finely chopped(4-5 leaves)
parmesan cheees. (opptional)


put water on to boil for the past..add a pinch of salt
fry off the onions for approx 6 mins with oil before adding the tomato puree and frying for a further 4 mins.
add the tomatoes and garlic (and splash of water if dry) leave to simmer while putting pasta into boiling water.
add salt, pepper and chilli powder to the sauce. also add more water until it gets to the texture you want.
put your past in the water

put the basil in the sauce at the last minute to enhance the flavour and take the sauce off the heat.
strain the past and mix some butter through it to loosen it and add flavour.

either mix the pasta with the sauce or put the sauce over it on the plate.

1 x Carton of Tomato pasta

1 x Tin of chopped tomato's

2 x table spoons of dry mix Italian herbs

2 x table spoons of grated Parmesan cheese

2 x vegetable or beef stock cubes

4 x cloves of garlic crushed

1 x white onion

1 x red onion

2 table spoons of extra virgin olive oil

crushed chill peppers to your taste.

2 x teaspoons of lemon juice

1 x red sweet pepper

1 x yellow sweet pepper.

enough pasta of your choice for four people.



Put pasta on to boil.



chop onion, sweet peppers and garlic. Add oil to a deep pan and heat, place in onion,garlic and sweet peppers fry for 2-3 minutes. poor in the pasta, add the chopped tomatoes crush and add stock cubes, herbs and crushed chillies. cook on a low heat stirring until you bring to the boil. add the lemon juice and Parmesan and heat for a further 2-3 minutes.



drain pasta and add to the sauce stir and serve immediately.
