Is this the real recipe of Mediterranean chicken and olive casserole?

From my friends I have heard some other process... Please confirm because I need to prepare this recipe especially for one of my special friend this weekend... :)

sure but if you dont like that then heres another one:-

- 8 skinless chicken legs

- 录 cup of plain flour

- 2陆 tablespoons of olive oil

- 1 large sliced onion

- 2 cloves of crushed garlic

- 1 tablespoon of fresh thyme leaves

- 录 cup of fresh oregano leaves

- 陆 cup of dry white wine

- 400g tin of peeled tomatoes

Method



1) Preheat your oven to 180C. Put the chicken and flour into a large bowl and season with salt and pepper. Once you've tossed the chicken fully, remove it from the bowl shaking off any excess flour.



2) Heat two tablespoons of the olive oil in a large casserole dish with a heavy base over a medium heat. Cook the chicken legs in two batches until they're golden (about 10 minutes) then transfer them to a plate.



3) Heat the remaining oil in the dish and add the onion, garlic, thyme and oregano. Cook gently with regular stirring until the onion is tender (about 3-4 minutes). Add the white wine and simmer for 30 seconds. Now stir in the tomato and a cup of the stock.



4) At this point you need to return the golden chicken to the casserole dish, add the red and green peppers and bring the dish to the boil. Now transfer the dish to the oven and and bake for one hour. Next you remove the lid and add the olives and continue to bake the dish for another 30 minutes or until the chicken is tender.



5) Pour the remaining stock into a saucepan over a medium heat and bring it to the boil. Now place the couscous in a heated bowl and pour the stock over it. Stir the stock into the couscous and allow the it to stand for about 5 minutes until it is fully absorbed. Stirring the couscous with a fork at this stage ensures that all the grains are separated. Finally, serve the couscous and add the chicken mixture from the saucepan.

* 1/4 cup plain flour

* 8 skinless chicken pieces on the bone (such as lovely legs or thigh cutlets)

* 2 1/2 tablespoons olive oil

* 1 red onion, halved, sliced

* 2 garlic cloves, crushed

* 1 tablespoon fresh thyme leaves

* 1/4 cup fresh oregano leaves

* 1/2 cup dry white wine

* 400g can whole peeled tomatoes

* 2 1/2 cups chicken stock

* 1 red capsicum, sliced

* 1 green capsicum, sliced

* 1/2 cup pitted kalamata olives

* 1 cup couscous



Method



1. Preheat oven to 180掳C/160掳C fan-forced. Place flour and chicken in a large bowl. Season with salt and pepper. Toss to coat. Remove chicken from bowl, shaking off excess flour.

2. Heat 2 tablespoons oil in a large, heavy-based, flameproof casserole dish over medium-high heat. Cook chicken, in 2 batches, for 8 to 10 minutes or until golden. Transfer to a plate.

3. Heat remaining oil in dish. Add onion, garlic, thyme and oregano. Cook, stirring occasionally, for 3 to 4 minutes or until onion is tender. Add wine. Simmer for 30 seconds. Stir in tomato and 1 1/2 cups stock. Return chicken to dish. Add capsicum. Cover dish. Bring to the boil. Transfer dish to oven. Bake for 1 hour. Remove lid. Add olives. Bake, uncovered, for 30 minutes or until chicken is tender.

4. Pour remaining stock into a saucepan over medium heat. Bring to the boil. Place couscous in a heatproof bowl. Pour stock over couscous. Stir to combine. Stand, covered, for 4 to 5 minutes or until stock is absorbed. Stir with a fork to separate grains. Divide couscous between plates. Top with chicken mixture. Serve.

- 1 large sliced green pepper (capsicum)
