Moussaka
1 lb Ground beef
1 c Chopped onion
Olive oil 1 c Water
1/2 c Tomato paste
2 tb Minced parsley
1 Stick butter
Salt %26amp; pepper 2 md Eggplants
1/2 c Bread crumbs
2 Eggs, well-beaten
1/2 c Grated cheese
Brown the meat %26amp; onion in some olive oil. When well-browned, add water, tomato paste, parsley, butter, %26amp; salt %26amp; pepper %26amp; let it simmer on low for 1 hour or more, until sauce is thickened. In the meantime, peel %26amp; cut lengthwise the eggplants in 1/4" thick slices. Saute in olive oil to a golden brown. Add 2 tbs bread crumbs to the meat sauce %26amp; mix well. Butter a baking dish well %26amp; sprinkle with some bread crumbs. Place 1/2 of eggplant slices in the dish, %26amp; spread 1/2 of the meat sauce on top - repeat. Pour eggs on top %26amp; spread evenly. Sprinkle with cheese %26amp; bread crumbs %26amp; bake at 350 for 1/2 hour or until golden.Give me your favorite easy Mediterranean recipes.?
My favorites are greek salad with feta cheese, olives, cucumbers, tomatoes and a tangy lemon vinaigrette. No lettuce required. I also like couscous with all of the fixings, and tsatziki sauce, but I wouldn't suggest eating it by itself, usually one would eat it with gyros, but those are semi easy to make. Hummus and pita bread is a favorite too. And for something sweet, Greek yogurt with honey and walnuts, although I usually don't eat it with walnuts. Mediterranean Veggie
Zesty Peppadew鈩?piquant peppers, feta cheese, cucumbers, lettuce, tomatoes, onions and cilantro hummus on our Tomato Basil bread.
Here is a recipe for cilantro hummus and Tomato Basil bread.
Cilantro Hummus:
1/2 c tahini
6 T lemon juice
3 garlic cloves
1/3 c water
1/4 c olive oil
2 c garbanzo beans (chick peas) - drained
1 t salt
1 t coriander
1/2 t cumin
1/2 t cayenne pepper (to taste)
1/2 c coarsely chopped cilantro
In food processor, blend tahini, lemon juice, garlic, water and olive oil.
Add garbanzo beans, spices and cilantro. Blend in food processor until smooth.
Tomato Basil bread:
* 1 (8 ounce) can tomato sauce
* 1/4 cup warm water
* 2 tablespoons dried powdered milk
* 2 tablespoons olive oil
* 1 tablespoon sugar
* 1 1/2 teaspoons salt
* 1 1/2 teaspoons dried onion flakes
* 1 1/2 teaspoons dried basil
* 1 teaspoon dried marjoram
* 1 teaspoon dried thyme
* 3 cups flour
* 1 3/4 teaspoons yeast
1.add all ingredients to bread machine.
2.select basic bread setting.
