Mediterranean Pasta



1 cup uncooked Bowtie

1 tablespoons extra-virgin olive oil

1 can aspargus rinsed and drained

1 large garlic clove, finely minced

3 cups ripe tomatoes, diced

1/4 cup Kalamata olives, pitted and chopped

1/2 cup thinly-sliced fresh basil

Salt and freshly-ground black pepper, to taste

1/4 cup grated Romano cheese.



Cook the pasta - salted water until al dente, usually about 8 to 10 minutes. Drain.



While pasta cooks, heat olive oil in skillet , add the aspargus and garlic. Cook, stirring, until aspargus are heated about 3 minutes. Remove skillet from heat.



Add tomatoes, olives, basil, salt, and pepper, stirring to combine.

Place pasta on plate, and top with sauce and grated cheese

Grilled Mediterranean Vegetable Sandwich --







INGREDIENTS

1 eggplant, sliced into strips

2 red bell peppers

2 tablespoons olive oil, divided

2 portobello mushrooms, sliced

3 cloves garlic, crushed

4 tablespoons mayonnaise

1 (1 pound) loaf focaccia bread







DIRECTIONS

Preheat oven to 400 degrees F (200 degrees C).

Brush eggplant and red bell peppers with 1 tablespoon olive oil; use more if necessary, depending on sizes of vegetables. Place on a baking sheet and roast in preheated oven. Roast eggplant until tender, about 25 minutes; roast peppers until blackened. Remove from oven and set aside to cool.

Meanwhile, heat 1 tablespoon olive oil and saute mushrooms until tender. Stir crushed garlic into mayonnaise. Slice focaccia in half lengthwise. Spread mayonnaise mixture on one or both halves.

Peel cooled peppers, core and slice. Arrange eggplant, peppers and mushrooms on focaccia. Wrap sandwich in plastic wrap; place a cutting board on top of it and weight it down with some canned foods. Allow sandwich to sit for 2 hours before slicing and serving.

Mediterranean Pasta



INGREDIENTS



* 1 cup macaroni

* 2 ounces roasted red bell peppers, diced

* 1/4 cup sliced black olives

* 1/4 cup crumbled feta cheese

* 1 tablespoon olive oil

* 1 tablespoon minced garlic

* 1 teaspoon lemon juice

* salt and pepper to taste



DIRECTIONS



1. In a small bowl or cup, combine olive oil and chopped garlic. Set aside.

2. Cook pasta in a large pot of boiling water until done. Drain.

3. Transfer pasta to a medium mixing bowl, and add roasted red peppers, olives, and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.

6 green peppers, cut in sm. pieces

6 tomatoes, cut in sm. pieces

4 onions, diced

2 cans of tomato sauce

3 tbsp. of oil

1 tsp. of safran powder

1 tsp. of garlic powder

1 tsp. of salt

12 eggs

1 glass of water



Fry onions, garlic, safran, and oil until onion is soft but not brown. Add tomato sauce, tomatoes, peppers, and water to the above mixture. Cook for 20 minutes on medium/low or until peppers are cooked.

Add eggs one at a time while mixing them. Cook for 10 more minutes or until eggs are cooked. Serve with pita bread warm or cold. Enjoy!

Turkish fried carrots.

Chop the carrots into half inch pieces. Boil for 8 minutes, then toss in seasoned flour (flour with salt %26amp; black pepper) %26amp; deep fry as you would with "Fries" or 'Chips' etc.

Warm half a cup of yogurt %26amp; pour it over the carrots %26amp; serve. DELICIOUS!

Chickpea salad

This is a very easy recipe and can feed a crowd if necessary by increasing the quantities.

8 oz (225g)dried chickpeas soaked overnight.(or 16oz drained canned chickpeas.

2 tablespoons finely chopped parsley

1/2 a small onion finely chopped

2 spring (green)onions finely sliced

1 clove of garlic crushed

2 tablespoons of lemon juice

2 tablespoons of olive oil

1 teaspoon salt

1/4 teaspoon cayenne pepper

1/2 teaspoon ground cumin



Rinse the chickpeas and place in a large saucepan half filled with cold water. Bring to the boul and simmer until tender.Drain and rinse with cold water.

Amanida de macarrons -

Macaroni salad



1/2 pound macaroni or fusilli

2 eggs

4 ounces cooked ham - cut into 1/2 inch pieces

Extra virgin olive oil

Salt

Wine vinegar (optional)



Bring 3/4 gallon (3 liter) water to a boil in a big soup pot. When the water is rolling boil, add salt, and all the macaroni or fusilli at the same time while you stir the macaroni with a long-handled wooden spoon. Stir often.



Keep the macaroni or fusilli boiling hard all the time until they are al dente, meaning that you remove them from the heat when they still offer a slight resistance when you chew them. If they become mushy, this pasta salad recipe will be visually less attractive.



Drain the macaroni or fusilli immediately in a colander. Do not rinse them. To speed up the cooling of the drained pasta for this macaroni salad recipe, sprinkle a little olive oil over the macaroni, and spread them on a flat large tray until they reach room temperature.



In the meantime, heat a little oil in a frying pan, beat the eggs, add some salt, and make the omelet. Remove from heat, let it cool for a moment and dice it.



Place the cooled macaroni or fusilli in a serving dish. Add the dices of the omelet and ham. Mix well. Add olive oil and salt to taste, and a little vinegar. Mix thoroughly so that all the ingredients of this macaroni salad recipe blend correctly.



The best method for knowing how much oil you should add is to pour some olive oil from the bottle, add a somesalt, and taste one macaroni. Once you have prepared this pasta salat recipe two or three times, you will feel when the dressing is just right without any difficulty.



Variations of this macaroni salad recipe

You can replace the omelet with a boiled egg.



You can leave out the vinegar, if you don't like its taste





Fried Chicken

Serves 2



2 whole chicken legs 鈥?drumsticks and split breasts are also fine

2 tablespoons olive oil

2 sprigs rosemary

4 small sprigs thyme

Dried ginger root 鈥?grated. Or use 戮 teaspoon of ground ginger

6 leaves fresh marjoram 鈥?chopped. Or use 陆 teaspoon of dried marjoram

Sweet ground red pepper

陆 teaspoon ground turmeric

Salt

4 lime slices 鈥?Replace with 2 lemon slices if you don't have limes

A short dash of soy sauce





Fried chicken recipe preparation method

Preparation time: 5 minutes.

Cooking time: 30 minutes.



Sprinkle some freshly grated ginger on both sides of the chicken legs. Scatter the marjoram, a few pinches of red sweet pepper, the turmeric and salt to taste on both sides of the chicken pieces.



Heat 2 tablespoons of olive oil in a skillet or frying pan. Add the rosemary and thyme sprigs.



When the olive oil is hot, add the chicken thighs and brown each side uncovered for 5 minutes over low-medium heat. You should begin to see a nice crust.



Place 2 lime slices on top of each chicken piece and squeeze a little bit of lime juice over them too. If you use lemon use only 1 slice for each chicken leg, because lemons aren't as sweet as limes.



Pour a short dash of soy sauce over the chicken legs. Turn down the heat a little bit and cover.



Cook each side for 10 minutes. It's advisable to turn over the fried chicken pieces twice during the cooking time.



Serve this fried chicken recipe...

Garnished with sun-dried tomatoes in olive oil.
