doing a really nice chana dal ( chickpea curry ) with a steamed chicne tandoori would be great.
Then you could also make roti - veyr thin flat bread- although they're use naan bread.
CHickpeas are so amazing I can live off them, and they are used every mealtime in INdia, in flour or stews, or theusualy breakfast meal of chana dal and roti...omg.
SO make a butter chicken, or tandoori chicken to go with that, would be good.
USually in Moroccan cuisine, the chicken is cooked separately, and in India too, they cook the chickpeas on their own. and don't mix meat and veg in the same dish.
You could make a really pokey lovely chana dal, and do the chicken in any way, steaming in paper or leaves, or cooking it IN butter, ( you can't really say you have lived if you haven't eaten butter chicken ).
Not too sure about the medierranean, they would use herbs, and not curry spices.
BUt they'd use garlic, pepper, onion, all those are used in Moroccan and Indian too.
I love chickpeas, so I'd go for the most delicious way to have them which is easy, they are delicious so many ways.
IN soutern italy they make them with garlic paste- mash together and add olive oil, olive oil, salt and more olive oil, and add to wild spinach, then roast or steam a chicken plain to go with.
In Turkey and all over middle east, they make hummous, using mashed chickpeas, garlic and tahihi and then add roasted chickpeas and garlic , oil, sizzling red chili powder, sumac and peprika, more oil, and chopped parsley, and they do that with a rotisserie ( stemaed roasted chicken filled with rosemary, salt and pepper and lemon).
Then INdian would od the chana dal, butter or masala chicken.
I love Indian food no matter what I adore it. SO Im going for that.

Cos if you go Moroccan, their usualy way of making chickpeas is to mash them, and I love eating them in nut-form.Tasty chicken and chickpea recipe?
