Opinions wanted on this recipe please?

I made this for dinner the other night and it was really good, quick and easy. I was going to post it to my blog but just wanted some opinions first on how I have written it - does it read well, any changes needed? Please let me know what you think, thanks!



Roasted Vegetable Antipasto Pasta



1tbspn olive oil

3 cloves garlic finely chopped

1 jar of Della Terra Mediterranean Antipasto

2tbspn balsamic vinegar

2 cups fresh baby spinach chopped

1/2 cup fresh basil chopped, plus sprig for garnish

1/2 cup goat cheese -optional

1/4 cup parmesan cheese -optional

250g pasta of your choice





Bring your pasta cooking water to a boil and prepare your ingredients for the sauce.

While your pasta is cooking, prepare your sauce.

Prepare your pasta according to the package directions making sure not to overcook. Once your pasta is cooked, drain over the serving bowl. The hot water will keep your serving bowl warm while you complete the dish.

Add olive oil to a non-stick saucepan and add chopped garlic, warm gently over medium heat to release the flavour of the garlic, approximately 3 to 4 minutes.

Just as the garlic starts to colour, add the vegetable antipasto and turn up the heat to medium high and toss.

Once the heat in the pan is up, add the balsamic vinegar and let cook down for a few minutes.

Add chopped spinach and basil and toss, allow to wilt for 1 minute.

Add goat cheese and toss.

Add cooked pasta, toss together, reheating your pasta and allowing it to soak the flavour of your sauce.

Top with parmesan cheese and garnish with fresh basil leaves. Serves four.Opinions wanted on this recipe please?
Use tbsp as the abbreviation %26amp; leave a space after the number.

Since you give all ingredients in american measure, why switch to grams?

Say 1 cup of pasta or 1/2 lb by weight.

Just by the ingredients you can use the T symbol for tablesoon and t symbol for teaspoon.Opinions wanted on this recipe please?
Hi Vanessa, It sounds really nice, I would possibly use slightly less garlic ,or add the words 'or to taste' (some people think that recipes are written in stone and might think it is too much). I would be less inclined to name a single variant of the Antipasto, but use 'jar of (your favourite) I don't believe in advertising freely.I would not abbreviate tablespoon to T then your dish becomes 'universal' we in the UK would not recognise the difference between T and t In a recipe - go global girl!

These are only semantics though I think it is a nice dish. I hope this helps. All the best.Rab
