Tilapia and milk fish is not suitable to make Fish briyani. Any big bone fish such as Tuna, black promfret. Do not use fish with tiny bones. Below is the recipes:

Ingredients:

Fish - Black Promfret or any fish of your choice

Chilly powder

Turmeric powder

Garam masala

Salt

Ginger-garlic paste

Green chilly paste

Onion -2

Tomato -1

Coconut - 1/2 cup

Curd- 1/2 cup

Coriander leaves

Lime juice of 1 lime

Basmati rice cooked partially with ghee

Yellow colour-2drops

Method:

Marinate fish with salt, turmeric powder, chilly powder %26amp; keep for 30mins.

In the same oil, saute onion. Put ginger-garlic paste %26amp; green chilly paste.Mix well.Put tomato, garam masala %26amp; coriander leaves. Add 1/2 cup coconut mixed well with curd into it. Put on low flame.Mix well.Put the fried fish into it.Mix slowly taking care not to break the fish piece.

On top of this, add the partially cooked ghee-rice.Donot mix. Garnish on top with coriander leaves , little garam masala, ghee, lemon juice and yellow colour. Steam in closed vessel. Let the flavour of masala from bottom spread over the rice on top. Once rice is fully cooked, transfer the rice from top to another vessel, followed by the masala. Spread evenly.
if you want to get the best results, you must cook the biryani properly. Sam has the right idea. Remember, the fish must cook at the same rate as the partially cooked rice. You may have to experiment a bit to get this just right.

Don't forget to seal the bowl/pot you cook the biryani in, and its best to keep the fish in one layer on the bottom of the pan, which will be the top when you tip it out. Ensure the rice fills the bowl/pot to the top. What kind of fish can I use for biryani?
