Hey, does anyone know about any vegan/vegetarian cookbooks that present quick, easy, yet delicious recipes that also have pictures of the food, and the nutritional value in the book? I'm also looking for a book that has a good variety of food (from sandwhiches to soups, from pasta to vegetable dishes, desserts etc.) and also a wide variety of ethnic foods like Indian, Mediterranean, Mexican, etc.Vegetarian/vegan cookbook recommendations?

I have yet to run across a vegan cookbook with nutritional information, but Isa Chandra Moskowitz's "Vegan With a Vengeance" has pictures of some of the food, but not all.
Sadly, adding photographs is expensive, which is why many vegan cookbook authors don't have them.
Like VeggieTart said, printing color photos is expensive so you don't see a lot of cookbooks (especially ones directed at a more limited market like veg*ns) that have photos of every recipe. I also don't have any with nutritional information, but there are several websites where you can enter the ingredients in a recipe and churn out the nutritional data yourself. Vegan with a Vengeance and Veganomicon both have (delicious) recipes inspired by a wide variety of ethnic cuisines.Vegetarian/vegan cookbook recommendations?
Strongly recommend any of Mollie Katzen's cookbooks.
