I have a great chicken recipe from a deTraci Regula's "Mysteries of Isis" - chicken baked with sweet wine (Mavrodaphne, but Port is suitable), soy sauce, scallions, and brown sugar (I'm thinking of adding a tbsp of ginger for a kick) for 40 minutes at 350 degrees. It's delicious everytime I make it, and I thought it'd be a great dish to make my for my new boyfriend (1/2 Egyptian and Greek) to show him I can cook ;)
That said, since it's Mediterranean, I thought it would also taste very good made with lamb, but would I need to change the temp/baking time? If so, to what? Also, I've been told shrimp or fish would be good with that, but I know that 40 minutes in the oven would render either to cat food, lol. What would be a good time to cut that down to?
I'm thinking of serving it with lemon-lavender rice and/or (he has a big appetite, which is so sexy) chilled cucumber-cumin cream soup. What wines/beverages would go with that?
Thanks in advance for you help :)
- ReneeVariations on a Mediterranean chicken dish?
I would use lamb chops. i think the baking time should be the same. if shrimp or fish is used cut the baking time in half. a nice red wine would be nice. like a marlot or something similar. go to your local liquer store and maybe ask clerk about some good greek red wines that have a hint of sweetness.
