I like to get some mixed Bell Peppers, Courgettes, Red Onion and some Garlic, cut them all up all nice a chunky, bung them in an oven tray and bake them in the oven with plenty of good olive oil until they nicely cooked.
Once done remove the oven tray from the oven, pour over the dried Cous Cous and give it a good stir to get it all covered in the lovely juices from the vegetables then add boiling water or Vegetable stock a little at a time until the Cous Cous is cooked.
Get some fresh Mint leaves or even some dried Mint if you can't get fresh and stir it in and there you have a lovely tasting easy peasy Cous Cous.
Very nice on it's own or can be served as an accompanyment to Chicken or Fish.
Nice which a blob of Greek Yoghurt on the side.
Basic couscous recipe:
This couscous recipe is very basic. Couscous goes with just about any main course, especially chicken. You will find couscous more often in North African cuisine. Most couscous sold in grocery stores has already been pre-steamed, so preparation is vey simple!

Ingredients:
1 1/2 cup couscous
Serve any of the following: Buttered chicken, chicken or lamb curry.
2 3/4 cups water
1/4 teaspoon salt
Preparation:
In a saucepan, bring water or some broth to a boil. Add salt and stir. Add couscous and remove from heat and allow to sit for about 5 minutes. Couscous should be light and fluffy, not gummy. Be sure to allow the couscous to absorb the water.Nice recipe for cous cous?
Go for a superfood salad! Add little stems of steamed purple sprouting broccoli, diced butternut squash and some pomegranate (cut in half %26amp; hold in your hand flesh side down and bang the back of it with a teaspoon ... the little jewels fall out easily!).. for a really healthy topper sprinkle with pumpkin %26amp; sunflower seeds. For a more med style go with the roasted veg - skin the peppers first, it is really worth the effort
Stuffed cous-cous.
Take the cous-cous and dissect each one in half, scooping out the center. Mix the part you scraped out with coriander and lemon juice then stuff back inside each grain. Seal with egg and steam lightly until tender.
Alternatively:
1: Open packet
2: Tip contents into bin
3: Cook something else instead.

You could use chopped fresh parsley and mint and lemon juice.
