Olive Lovers Dip
Ingredients
2 (8 ounce) packages cream cheese, softened
1 (5 ounce) jar green olives, drained and chopped
3 tablespoons ketchup, or as needed (or use the olive juice to thin the cream cheese)
In a medium bowl (or in a mini-food processor), mix together the cream cheese and ketchup, adding ketchup as needed to make the mixture a light pink color. Stir in olives. Cover, and chill for at least one hour before serving.

Doris Day Steak Recipe
1 lb. thin sliced round steak (in one whole piece)
1 small can mushroom pieces (drained)
1 small jar pimento stuffed green olives with (drained)
1 can Aunt Penny's Hollandaise Sauce (you can use one cup of any Hollandaise)
Paprika
Coat both sides of steak generously with Papika (can use smoked Papika or regular - depending on personal taste). In center of the steak, put Hollandaise, mushrooms and olives. Bring up sides of steak to hold the ingredents in center and secure by tieing with string around steak (or securie with wooden toothpicks) to keep everything in center.
Put in oven proof baking dish and add 1/4 cup of water on bottom of pan. Cover baking dish tightly. Cook in 400 degree oven for 1 hour.

Farfalle Fresh Tomatoes, Wine and Golden Raisins
鈥?6 tablespoons extra-virgin olive oil , divided
鈥?1 cup julienned red onion
鈥?1 tablespoon minced garlic
鈥?2 cups peeled, seeded, and diced tomatoes
鈥?3/4 cup sliced olives, such as kalamata
鈥?1/2 cup golden raisins
鈥?1/2 cup dry white wine
鈥?2 tablespoons drained capers
鈥?1/2 teaspoon crushed red pepper flakes, or to taste
鈥?Kosher salt and freshly ground black pepper
鈥?3/4 pound farfalle or other dry pasta
鈥?1/4 cup freshly chopped basil leaves
鈥?1/2 cup crumbled feta cheese , for garnish
Directions
Heat 2 tablespoons of the olive oil in a large skillet or saucepan and cook the onions and garlic until very tender, 6 to 8 minutes. Add the tomatoes, olives, raisins, white wine, capers, and crushed red pepper flakes and cook until the tomatoes have broken down slightly and the sauce is slightly thickened, 7 to 10 minutes. Add kosher salt and black pepper, to taste, and set aside to keep warm.
Bring a large pot of salted water to a boil and cook the pasta according to package directions until just al dente. Drain the pasta, reserving 1/2 cup of the cooking liquid, and place the pasta in a large mixing bowl along with the hot pasta sauce and the basil. Toss to combine, adding pasta cooking water 1 or 2 tablespoons at a time to thin the sauce, if necessary. Serve the pasta in shallow bowls, drizzled with the remaining olive oil and garnished with the feta cheese. Serves 5-6.
Add a tin of sliced black olives to any pasta, potato or mixed veggie salad. I use a lot of whole black olives as garnish for enchiladas, and sometimes sliced black olives as part of a tamale pie casserole. Google up the Sicilian veggie miracle called 'Caponata', which includes green olives, capers and pignoles [pine nuts] as well as other ingredients too numerous to mention.
Oh yes...an elegant sandwich filling is to incorporate chopped black olives in your deviled egg filling. Creates a whole new taste, and also can be used as a dip. I also include black olives as part of a tuna or salmon dinner salad - can't go wrong!Looking for recipes incorporating olives...?
A friend of mine used to bring these sandwiches for lunch and after weeks of wondering I asked her what the heck she was eating. It was cream cheese with chopped olives (green). I thought it sounded gross until I tried it, it was really good. My aunt makes a spread with cream cheese and chopped olives and walnuts, you use a little (a teaspoon or so) of the brine to thin it out, it's awesome on crackers. I crave olives now and then, not pregnant here either. I think it's the salty briny flavor. I've tried them stuffed with onions, almonds and garlic and they're delicious.
Here is an easy recipe with olives. Simply toss your favorite cooked pasta with chopped olives, a can of chopped artichoke hearts (drained) and either your favorite pasta sauce or chopped tomatoes with a bit of olive oil. Very easy and wonderful every time. Enjoy!
