How do I prepare fresh raw green olives? Recipes welcome?

Ok, so I went to Jungle Jim's for the first time and I strongly recommend you go too!



One of the treasures i brought home was a container of fresh, straight off the tree green olives. I was super excited because I am a bit of an olive queen. Well, one little nibble and I discovered why I've never found these gems in regular supermarkets before! The raw olive makes your face contort in ways you never knew it could.



I'm amazed the Mediterraneans believed in this little fruit enough to discover a way to make it edible. (Perhaps they were merely driven by hunger because if I was foraging, I would've crossed the olive off my list at first bite).



So here I am, asking for your own tried and true recipes. I'm not really looking for links, I want personal feedback from someone who's done this before. If they come out tasty, I'll be picking up more on my next Jungle Jim's journey.



PS - I believe i have 16oz to work with and yes, i know to soak them in a salt water brine, but that's boring. I feel like the sky's the limit and I want to know what other ingredients I can add, what tasty combinations have worked for you?How do I prepare fresh raw green olives? Recipes welcome?

How about a nice cream cheese and olive sandwich? I like to add a tomato slice to take off some of the bitterness, or you could add some roasted red pepper, diced small
My family uses the bitter olives to stuff empanadas. Saute with some onions, olive oil, chili powder or crushed red pepper to taste, and garlic until tender and somewhat rendered. You may need to add some stock. Add ground beef, cumin, cinnamon, green chiles (and tomatoes if you like)......Wrap in pastry, bake, and then dip in a great spicy queso. The mixture should resemble taco meat, but will be tangier and tastier with a bit of heat and a flavor that folks love but can rarely pinpoint!
