I call them Dolmadakia and I love them I really abhor the word "Dolma".
Here is my way of making Dolmadakia.
40-50 Tender vine leaves
1/2 pound minced beef (lean)
1 cup rice (arborio )
1 bunch dill,finely chopped
1 bunch spring onions,finely chopped
2 cloves garlic,crushed
1/2 cup tomato juice
1/2 cup olive oil
1 tsp sugar
Salt,pepper
Pinch of cumin (optional)
Juice of 2 lemons
Water
Mix all ingredients together in a bowl(except lemon and water)
In a heavy pot place a few of the leaves to coat the base.
Lay a vine leaf on your palm.
Place a tbsp of mixture in the middle, role sides in and turn like a cigar
squeezing tight.
Place dolmadakia in a nice order in the pot, very close together.
Add lemon juice and water to cover.
Simmer on low heat for about 1 hour.
Add a little more water if you have to along the way.
Serve cold with tjatjiki sauce.Excerpt from the book "Take the Taste of Greece with you". By Litsa BolontzakisGood recipe for dolma?

Hi, I saw this same Q in TR category, which is cool if u just wanna know the different ways of making it...but just to let u know its called dolmades in Greece. People may think u r trying to stir trouble.
You should ask that in Turkey section. Dolma is a Turkish meal, not Greek.
