I have several pasta recipes and since most pasta recipes were created in the Southern regions of Italy (not all, but most) I thought I would give it a shot.
How about a nice refreshing Pasta with Pomodoro fresco. It's a no cook pasta sauce with tons of flavor and perfect for the summer:

Olive Oil
Garlic

So easy to make and so refreshing for summer.

MEDITERRANEAN BEEF AND VEGETABLES
1 lb. ground beef
1/2 c. onion, chopped
1/2 c. green pepper, chopped
1 c. canned tomatoes, drained
1 c. whole kernel corn
1/8 tsp. garlic salt
1/4 tsp. black pepper
1/4 tsp. allspice
1/2 tsp. oregano
1 c. shredded cheddar cheese
1/2 c. ripe olives, sliced
Saute onions and green peppers. Add meat in chunks and brown. Drain. Add tomatoes, corn and spices; cook slowly for 20-30 minutes. Stir in 3/4 cup of cheese and olives. Top with remaining cheese and serve with mashed potatoes, rice or pasta. Serves 5-6.
Spicy Chicken Seafood and Olive Spaghetti
1 陆 tbsp olive oil
1 lb medium shrimp, peeled and deveined
1 lb cooked chicken
1 cup diced green pepper
2 tbsp minced garlic
1 14 oz. can chopped tomatoes
3/1 cup white wine
2 tbsp tomato paste
1 lb medium clams scrubbed
1 lb mussels scrubbed
1 c. sliced ripe olives
戮 tsp kosher salt
陆 tsp crushed red pepper flakes鈥?br>
2 qts. Cooked spaghetti
录 cup chopped basil
Methods/steps
Heat oil in a large sauce pan over medium high heat. Add shrimp, green peppers and garlic and cook for a minute. Stir in chopped tomatoes, white wine and tomato paste. Add clams, and mussels steam for 4-5 minutes. Remove lid and stir in olives, chicken and pepper flakes. Toss with spaghetti and basil.
